Ingredients
Shortbread Layer
- 100g almond flour
- 2 tbsp melted coconut oil
- 1 tbsp maple syrup
- Pinch of salt
- Dash of vanilla extract
Peanut Butter Layer
- 125g smooth peanut butter
- 2 tbsp melted coconut oil
- 2 tbsp maple syrup
Chocolate Layer
- 1 x 160g bag Nibble Simply Divinely Madagascan Dark 81% cocoa Chocolate Chips
- 1 tbsp melted coconut oil
Method
Step 1: Make the Shortbread Base
Combine the almond flour, coconut oil, maple syrup, salt and vanilla until a dough forms.
Press firmly into a small lined baking dish and freeze for 15 minutes.
Step 2: Make the Peanut Butter Layer
Mix the peanut butter, coconut oil and maple syrup until smooth.
Spread evenly over the shortbread base and return to the freezer for 15 minutes.
Step 3: Add the Chocolate Topping
Melt the chocolate chips and coconut oil until smooth and glossy.
Pour over the peanut butter layer and spread evenly.
Freeze for around 15 minutes until fully set.
Step 4: Slice & Enjoy
Cut into squares and store in an airtight container in the freezer.
