Healthy Cookie Dough Ice Cream Lolly Recipe (Lower Sugar)

We’re not going to lie… these ice cream lollies (frozen yogurt pops or whatever you want to call them) are SERIOUSLY yummy. They’re incredibly easy to make, naturally lower in sugar than most shop-bought ice creams and made with simple, clean ingredients.

We did say the chocolate drizzle was “optional” but when is chocolate ever optional? Stuffed with our Cookie Dough bites and finished with a drizzle of melted 81% Madagascan dark chocolate chips, these homemade ice cream lollies are the perfect healthier summer treat.

Healthy Cookie Dough Ice Cream Lollies (makes 3)

Ingredients:
40g of raw cashews
100g of Greek yogurt (or yogurt of choice)
30g coconut cream
25g maple syrup
Generous pinch of salt
1tsp vanilla extract
1 bag of Nibble Simply Cheeky Choc Chip Cookie Dough bites
Optional- Nibble Simply Divinely Dark Madagascan Dark Chocolate Chips to drizzle

Method:
• In Nutribullet or food processor, blitz cashews down to a fine flour
• Add yogurt, coconut cream, maple syrup, salt and vanilla extract. Blitz until mixed well
• Cut Cookie Dough bites in half and add to ice lolly tray
• Cover with yogurt mixture then chill
• Drizzle with melted chocolate and chill

Top Tips
Use full-fat yogurt: It creates a creamier, softer texture which is more like ice cream
Don’t skip the pinch of sea salt: It makes the vanilla and chocolate flavours pop, especially in lower sugar recipes.
Freeze for 4 hours or until completely firm.
